After a break in October, my latest ABC Radio spot on 9 November featured my Fantastic blueberry and lemon cake.
Lucie and I chatted about the wonders of the summer season, with the variety of fruits available over the southern Christmas season. These include berries and of course, the wonderful lemon.
This cake is best made in a bundt pan, as Lucie did when she tested out the recipe. But she also made a surprising diversion from the recipe, as she didn’t have sour cream to hand. If this is the case, I’d normally suggest substituting yoghurt, milk or buttermilk.
Or a mix of yoghurt and milk.
But Lucie surprised me with her blend of mayonnaise and cream! I nearly fell off my chair, because it worked. Lucie’s producer Sarah confirmed this in an email after the segment. So there you go – Lucie’s invented a brand new version of this cake and a backup if you don’t have any other option.
You can even make soured milk by adding a teaspoon or two of lemon juice to a cup of milk, preferably whole milk (full fat). Some people call this ‘buttermilk’, but technically it’s not. Real buttermilk is a by-product of the butter making process and made by whipping cream until it splits. The solids are what becomes the butter and the liquid is the buttermilk.
