In my August spot on In Season on Sundays with Lucie Cutting on ABC Radio Hobart, I shared a rich chocolate self saucing pudding to chase the winter blues away.
I’ve been making this recipe for years – probably after discovering it in the Australian Women’s Weekly sometime during the 1980s. In that time it’s been tweaked and adjusted to suit my taste, especially the sugar content. I think the original recipe called for about 1.5 cups of sugar and I’ve reduced it down to half a cup.
To me, too much sugar is like too much chilli. It dominates the taste of the food and destroys all the other flavours around it. So, when it comes to a rich chocolate pudding, I want to taste the main ingredient without the cloying sweetness of too much sugar. Plus, too much sugar isn’t good for your health.
The pudding
The pudding consists of a deliciously chocolatey cake that floats on its own sea of shiny, silky chocolate sauce when baked. And it’s so incredibly easy, with the option of mixing it all up in the dish you bake it in, especially if you’re using a deeper casserole rather than a shallower baking dish.
